Skate with samphire

♦ Cook the skate in court bouillon. 
♦ Brown some shallots in a bit of butter.
♦ Add some white wine. 
♦ Once the shallots browned, drain them. 
♦ In a pan, heat some liquid cream, and add the shallots.
♦ Add salt and pepper.
♦ Rinse the samphire with clear water, 2-3 times. Cut them in small pieces and add in the pan.
♦ Place the skate in a plate and pour the warm mixture over it.
